"i have quite a few dalestrong knifes from most of the different series never a disappointment but have been looking for ""THE KNIFE"" and have finally found it! this Kiritsuke is awesome n glides through veg. excellent length and comfortable. i cut well over 500 qts of various veg a week, I've been using this knife almost exclusively for almost a month with just a couple swipes on my honing rod a day n again it just glides through."

If you need to

"If you need to cut fish and don't mind dealing with sharpening it when you get it, it's great. If you need to do literally any other task, just get a kiritsuke or gyuto (depending on your technique) or (if you eat a lot of fish, don't want many knives, etc. ) a kiritsuke-yanagi. Steel is meh but it does hold an edge, albeit not as long or as well as ZDJ-189 or Aogami super. Overall, I rarely use this knife, even with fish, after I got my Miyabi kiritsuke. If I need el cheapo, I have a gyuto I got for free that's worth roughly $50 that travels if I don't need a particularly nice knife."
