Having a good honing rod or steel, some whetstones, and a rust eraser will ensure you can keep a mercilessly sharp razor edge on your knives year over year. Honing steels are a quick way to bring an edge back to shape. Whetstones are for precision sharpening and can be used on knives, scissors, and other bladed tools. Whetstones come in different grits for different sharpening purposes. Kiritsuke Knives
The kiritsuke blends the Japanese Yanagiba (fish slicer) with a Usuba (vegetable knife) making it a versatile alternative to a chef’s knife. Designed with a sword-like front end, this visually stunning blade is a high-performance instrument of exceptional effectiveness. The flat geometry of the blade’s edge facilitates push-cuts over rocking cuts, making it an ideal choice for those chefs who prepare large numbers of vegetables. Kiritsukes are Japanese-style slicers used mainly for making thin slices of fish, vegetables, and fruit. The single bevel kiritsuke knife is traditionally only used by executive chefs because it requires advanced skill and is a status symbol in the kitchen. Yanagiba Knives
Yanagiba knives are Japanese style knives most commonly used to slice boneless fish filets for sashimi and sushi dishes. They can be used to filet and skin small to medium-sized fish as well. This type of blade angle and razor-sharp edge, in the hands of a master, can slice with very little cellular damage, which preserves the natural texture of the fish. The blade of a yanagiba is single-bevel, meaning flat on one side, angled to an edge on the other. This means the Yanagiba can get an even sharper edge than double-bevel blades and the cuts “pull” a little bit to the side. This helps release the slice away from the rest of the fish without friction so it doesn’t tear. The Yanagiba makes flawless slices of fish, perfect for the artistic display and delicate flavor of sashimi and sushi.
